Ingredients:
Half a pumpkin, peeled and cut into both cubes and slices
2 cloves garlic, minced
8 rehydrated shiitake mushrooms, sliced
2 tbsp Dried Shrimp, rehydrated
(reserve both mushroom and shrimp liquid)
2 lapcheong, sliced thin
2 cups uncooked rice
2 tbsp Dark soy sauce
2 tbsp Light Soy Sauce
1.5-2 tsp sugar
white pepper
1. Wash rice and add water accordingly. Add both soy sauce, sugar and pepper.
2. Add dried shrimp to a pan and let cook for 30s or until slightly dry. Then add oil and saute till fragrant.
3. Add minced garlic and saute for 30s. Then add the mushrooms and fry till fragrant.
4. Add lapcheong and fry for another minute.
5. Add pumpkin and fried mixture into the rice cooker pot and mix well.
6. Cook the pumpkin rice in the rice cooker.
7. Once rice is done, leave for about 10-15mins. Then, mix well, serve and enjoy! :>
