No Bake Protein Key Lime Pie Cups
Cottage cheese can really do anything 😍
INGREDIENTS:
2 cups 2% cottage cheese
3 tbsp sugar free maple syrup - I use @lakanto because it’s sweetened with monk fruit
Zest of 2 limes
Juice of 2 limes
1-2 tsp monk fruit/stevia/sweetener of choice
30 (75g) @simplemills sweet thins (my fav healthy alternative to graham crackers)
1 tbsp butter or coconut oil, melted
INSTRUCTIONS:
1. Crush up the sweet thins and mix with melted butter. Set aside.
2. Combine remaining ingredients in a food processor until smooth and creamy.
3. Divide graham cracker crumbs among 5 dessert cups (mine are linked in my Amazon store front in my bio). Top with key lime mixture. Garnish with any reserved crumbs & additional lime zest if desired.
