So a disclaimer that this is not my typical go-to recipe because the recipe I use is actually more time consuming although it’s worth it. BUT, if you want something similar and simpler, try this tweaked recipe below ⬇️
Ingredients:
* 2 cups long-grain rice, washed and drained
* 1 large onion, chopped
* 2 cloves garlic, minced
* 2 tomatoes, chopped
* 1 bell pepper, chopped
* 1 teaspoon ground cayenne pepper
* 1/2 teaspoon ground ginger
* 1/4 teaspoon thyme
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 3 cups chicken broth or water
* 2 tablespoons vegetable oil
* 1 tablespoon tomato paste
Instructions:
* Sauté the Aromatics: Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, tomatoes, and bell pepper. Sauté until softened and slightly browned. Then blend using a food processor or blender.
* Add Rice and Broth: Add the rice, blended aromatics, tomato paste, and chicken broth (or water) to the pot.
* Add Spices: Stir in the paprika, ginger, thyme, salt, and pepper. Bring to a boil.
* Simmer: Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed. Add bay leaf before you cover.
* Fluff and Serve: Remove from heat and let it sit for 5 minutes. Fluff the rice with a fork and serve hot. Enjoy your jollof rice and if you try it, lmk in the comments!
