Ingredients:
3-4 lb chuck roast 🐄
Dry Guajillo Peppers 🌶️
Cinnamon Sticks
Yellow or White Onion 🧅
Garlic 🧄
Beef Stock/Broth 🥘
Bay Leaves 🍃

Steps:
Cut your roast into 3 inch chunks and salt well all around. In a large heavy bottom pot/roaster, brown all sides well working in batches if necessary. Add all pieces back to the pot and add; 1 1/2-2 cups of stock, 2 Guajillo peppers, 4 garlic cloves, half an onion (just cut it in half, remove the skin and add to pot), 3 - 4 teaspoons of cumin, one small cinnamon stick, 3 bay leaves, and an extra cup of water. Bring to a boil and pop it in your oven at 325 degrees for 2 hours checking the liquid levels and tenderness of the meat occasionally. If necessary add more broth to braise. ((((( If you indulge, have a little drinky drink 🍹 while you wait 😉. ))))) If your meat isn’t tender at the end of the 2 hours, add more time in 20/30 minute increments until it falls apart or shreds easily with a fork. For the last 15-25 minutes, turn the oven up to 375 degrees for nice crispy edges on the meat.
Serve in warm corn tortillas with cilantro, onion, and salsa! 💃🏽
