What I learned my first year canning

Do the prep: all jars washed and warm. Dice all vegetables. Be sure to wear gloves, especially when cutting hot peppers! Capsaicin will irritate your skin!!

Expect a mess: despite my best efforts, something always spills, seeds and tops get everywhere. The pot will most likely boil over 🤷🏽‍♀️

It’s worth all the work: canning definitely takes more than I thought it would but it’s worth it! Seeing the jars in my hutch is such a satisfying feeling. And eating the food I grew and canned myself feels even better!
