Canning Cranberry Juice

We are learning more each day, each season and each year. A few weeks ago we decided to try canning our own cranberry juice. This is the “lazy girl” way which is perfect for this year since cranberries were almost impossible to find here in NCW.

What you’ll need:

* 1 1/2- 1 3/4 cups whole cranberries

* 1/4 cup sugar

* hot water to fill jars to 1/2 - 1 inch headspace

wipe off mouth of jars, add lids and rings (fingertip tight) then water bath for 25-30 minutes depending on your elevation.

Let jars sit 6 weeks minimum before opening and using.
