Healthy dessert idea: pumpkin ice cream

INGREDIENTS

1 16 oz container cottage cheese preferably full fat

¼ cup honey

¼ cup pumpkin puree

½ teaspoon pumpkin spice***

½ teaspoon vanilla extract

¼ cup graham crackers* I used Simple Mills sweet thins

INSTRUCTIONS

Add cottage cheese, pumpkin, vanilla, honey and pumpkin spice to a food processor or blender and blend until smooth. Add in graham crackers and blend again until graham crackers are broken apart

Add ice cream to a loaf pan or container and freeze for 2-3** hours until set.

Serve ice cream, top with additional crushed graham crackers if desired.
