I love bananas… 😝 so I appreciate a good banana muffin, adding in the chocolate chips just make it 👌 you can replace with walnuts if you want! this is so fluffy and moist, full of banana flavour as well. And u don’t even need a mixer! super easy to make. Can keep in fridge, reheat in microwave in the morning for an easy breakfast 🧚🏻
Note: if u use super overripe and juicy bananas, it can change texture of muffin due to additional moisture! I prefer to use bananas that are spotted, and not too wet.
Ingredients:
- 195g flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 85g sugar
- 3-4 large bananas
- 1 egg
- 1tsp vanilla
- 75g melted butter
- 130g choc chips
Steps:
- whisk all the flour, BP, BS, salt and sugar tgt
- mash ur bananas
- add egg, vanilla and butter
- mix well
- fold tgt and add in choco chips before fully combining
(Don’t overmix!!)
- bake in preheated oven 180deg for 15-20 mins
- let cool and enjoy 🥰
