Sausage with Veggies Soup🥣

Created this fall soup in the evening with veggies I had in the fridge. It was super tasty and filling. You can use any veggies you have on hand as well whatever meat/alternative.

Ingredients

1 lb Mild Italian sausage

Half of white onion, diced

1 garlic bulb, minced

2 organic zucchini’s, chopped and halved

2 handfuls of organic spinach

1/2 cup fresh flat-leaf parsley, chopped

1 stem of fresh basil leaves, chopped

3 handfuls of organic cremini mushroom, sliced

3 tbsp salted butter

Many handfuls of grated parmesan reggiano

1/2 carton organic reduced sodium chicken broth

1-2 cups Organic 2% milk or half & half

2 tbsp unbleached all-purpose flour

1 tsp red chili flakes

1 tsp Herbes de Provence

1 tsp cracked pepper

1 tsp sea salt

Drizzles of extra virgin olive oil
