This lasagna is sooo sooo good and the best part is itβs Gluten Free and keto friendly!!! 1 Servings is only about 350 calories (Depending on the sauce you use) and has 26 GRAMS PROTEIN!!!! Itβs also packed with Vitamin D and calcium!!!
RECIPE:
1 Zucchini (Yellow or Green)
2 Tsp Avocado Oil
1/2-3/4 Cup Marinara Sauce (Any kind of sauce you like)
FOR THE FILLING
1/2 Cup Shredded Parmesan
1 Egg
1/2 Cup Chopped Mushrooms ( About 4-5)
1/3 Cup Chopped Parsley
Pinch of salt
1/2-1 Tsp Garlic Powder(Optional)
METHOD
- Preheat your oven to 200 C.
- Cut your zucchini into 7-9 slices and line on a sheet tray.
- Drizzle 2 Tsp Avocado oil and bake for 10-15 minutes. ( Until they are soft enough to roll)
- For your filling, mix all ingredients together leaving a little cheese to drizzle on top.
- In an oven proof bowl, build your lasagna. First put half the sauce , followed by your zucchini rolls.
- Top the rolls with the remaining sauce , sprinkle the left over cheese and bake for 15-20 Minutes and enjoy!!!
