Gravy without needing pan drippings

You don’t have to have pan drippings from a turkey to make the best gravy. Here’s the recipe for a delicious gravy:

- 3 tbsp unsalted butter

- 1/3 cup minced shallot

- 2 tbsp minced celery

- 1 clove garlic, minced

- 1 tbsp minced herbs (sage and thyme work well at Thanksgiving)

- 1/4 cup all-purpose flour

- 2-3 cups turkey/chicken/vegetable stock (add more or less depending on the thickness of gravy you prefer. If using drippings from a turkey, add these in first)

- kosher salt

- black pepper

- 1-2 tsp cognac (optional)
