INGREDIENTS
🫐 1/2 cup butter, frozen
🫐 2 cups all purpose flour
🫐 1.5 tbsp sugar
🫐 2 tsp baking powder
🫐 1/2 tsp salt
🫐 1/2 cup heavy cream
🫐 1 large egg
🫐 1 cup shredded Gouda
🫐 3/4 cup fresh blueberries
INSTRUCTIONS
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. Grate the frozen butter on the large holes of a box grater.
3. In a large bowl mix together the flour, sugar, baking powder and salt.
4. Mix the grated butter into the dry ingredients using a pastry cutter until the mixture resembles coarse crumbs.
5. Whisk together the heavy cream and egg in a small bowl. Add to the flour mixture and stir to combine.
6. Fold in the shredded gouda and blueberries.
7. Pour out the dough onto a lightly floured surface and form into a disc about 1 inch high. Cut into eight equal wedges.
8. Place the scones on the prepared baking sheet. You can brush them with a bit of milk to get a nice brown crust and sprinkle with extra cheese if desired. Chill for 15 minutes in the refrigerator.
Bake for 20-25 minutes or until golden brown.
