Our favorite weeknight pasta dish features chorizo sausage and an easy 4-ingredient sauce!
For the sausage, you’ll need Spanish style chorizo which is fully cooked or semi-cured. Just make sure not to overcook it, as it can become too dry if cooked for too long!
INGREDIENTS
- 8 oz pasta
- 1/2 tbsp olive oil
- 8 oz chorizo, sliced
- 14 oz can fire roasted tomatoes
- 1/2 tsp smoked paprika
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan
- salt to taste
INSTRUCTIONS
1. Cook the pasta according to package instructions.
2. Heat the olive oil in a skillet and gently crisp the chorizo. Transfer to a plate and set aside.
3. Add the fire roasted tomatoes, smoked paprika and heavy cream to the skillet. Cook for 5 minutes.
4. Stir in the parmesan and season with salt to taste.
5. Add the chorizo and pasta to the skillet and toss to combine.
