Ingredients:

- 4 boneless, skinless chicken breasts 🍗

- 2 cloves garlic, minced 🧄

- 1/4 cup fresh cilantro, chopped 🌿

- 1/4 cup lime juice 🍋

- 1/4 cup olive oil 🫒

- Salt and pepper 🧂

- 1 cup chicken stock 🍲

- 1 cup white rice 🍚

- 1/4 cup Greek yogurt 🍶

Directions:

1. In a small bowl, mix together garlic, cilantro, lime juice, olive oil, salt, and pepper.

2. Place chicken breasts in a dish and pour the cilantro lime mixture over the chicken, making sure to coat each breast.

3. Place chicken in a searing pan at medium heat until internal temperature is 165 F. (5-7 minutes)

4. While the chicken is cooking, prepare the rice. In a medium saucepan, bring chicken stock to a boil. Add rice and stir. Cover and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and the liquid is absorbed. Add in chopped cilantro and a dash of lime juice.

5. Once the chicken is cooked, remove from the pan and let rest for 3-5 minutes.

6. In a small bowl, mix together Greek yogurt, cilantro, and lime juice to make the cilantro lime sauce.

7. Serve the chicken over a bed of cilantro rice, and drizzle with the cilantro lime sauce. Enjoy!🤤
