Do you cook your own meals πŸ‘©β€πŸ³? With our busy schedulesπŸ•›, we find it almost impossible to cook everyday. However, we have recently got into meal prepping and realised that it is a nice compromise between our busy schedules and eating healthy. What we like about it is we only have to cook and clean up once, but get to enjoy delicious meals throughout the week without lifting a finger.

When we meal prep, we always make sure we have one carb 🍚, one vegetable πŸ₯¦ and one or two proteinsπŸ₯“πŸ₯© that we can switch around in case we get bored. One of the challenges with meal prepping is the food can get boring and we always get tempted to eat out instead, so we always make sure the side dishes are versatile and can be consumed in different ways.

πŸ‘©β€πŸ³Here's a meal prep combination we love recently because of how tasty and versatile they are:

1. Carb - Brown Rice 🍚

We love Naturel brown rice because it is chewy, almost similar in texture as normal white rice (but healthier!).

2. Vegetable - Blanched Spinach in Sesame Oil 🌱

Blanch spinach in salted boiling water, squeeze dry after. Cut into small pieces and mix with scallion, gochujang, soy sauce, minced garlic, sesame oil and a dash of sugar.

3. Protein 1 - Marinated Eggs πŸ₯š

Boil eggs for 6 minutes and place them in a mixture of soy sauce and water (1:1 ratio), honey/rice/corn syrup, diced onion, minced garlic, chili pepper and sesame seeds. Soak in the fridge overnight for the eggs to marinate.

4. Protein 2 - Stir Fry Beef πŸ₯©

Cook ground beef and garlic in a large skillet. After the meat is cooked, pour a mixture of 1/4 cup sugar, 1/4 cup soy sauce, 1/4 teaspoon ground ginger, garlic, sesame oil, pepper, red pepper flakes over the meat. Let simmer for 1-2 minutes for the meat to absorb the sauce.

❄️After you're done cooking, just place the food in airtight containers and refridgerate them until meal time. They should be good in the fridge for up to 1 week.

πŸ‘©β€πŸ³You can mix and match the side dishes too in case you get bored. In this case, we like to use the side dishes as toppings for rice bowls, filling for rice wraps or to make a sandwich.
