How to make Poached Grass Shrimp?
Ingredients:
• 500g fresh grass shrimp (with shell)
• 1 slice of ginger
• 2 scallions (white part only)
• Water for poaching
• Salt (optional)
Dipping Sauce:
• 2 tbsp soy sauce
• 1 clove garlic (minced)
• 1 red chili (sliced)
• 1 tsp sesame oil
Instructions:
1. Prepare the Shrimp:
• Rinse the shrimp under cold water and drain them. Leave the shells intact for flavor.
2. Boil the Water:
• In a large pot, bring enough water to a boil to submerge the shrimp.
• Add the ginger slice and scallions for flavor.
3. Poach the Shrimp:
• Add the shrimp to the boiling water and cook for about 2-3 minutes, or until the shrimp turn bright pink and opaque. Be careful not to overcook them.
• Remove the shrimp and immediately plunge them into ice water to stop the cooking and preserve the tender texture.
4. Prepare the Dipping Sauce:
• In a small bowl, mix soy sauce, garlic, chili, and sesame oil.
5. Serve:
• Arrange the poached shrimp on a plate, garnish with some fresh herbs (such as cilantro), and serve alongside the dipping sauce.
