How to make Dried Shrimp with Winter Melon?

Ingredients:

• 300g winter melon, peeled and cut into bite-sized pieces

• 50g dried shrimp

• 2 cloves garlic, minced

• 2 tablespoons vegetable oil

• 2 cups chicken broth or water

• 1 tablespoon soy sauce

• Salt and white pepper to taste

• Green onions, sliced for garnish

• Cilantro leaves for garnish

Instructions:

1. Soak the Dried Shrimp:

• Rinse the dried shrimp under cold water to remove any impurities.

• Soak them in warm water for about 15 minutes to soften. Drain and set aside.

2. Prepare the Winter Melon:

• Peel the winter melon, remove the seeds, and cut it into bite-sized pieces.

3. Cooking:

• Heat the vegetable oil in a large pan or wok over medium heat.

• Add the minced garlic and sauté until fragrant.

• Add the dried shrimp and stir-fry for 1-2 minutes until they release their aroma.

4. Add Winter Melon:

• Add the winter melon pieces to the pan and stir-fry for another 2-3 minutes.

• Pour in the chicken broth or water and bring to a boil.

5. Season and Simmer:

• Add the soy sauce, and season with salt and white pepper to taste.

• Reduce the heat to low and simmer for about 10-15 minutes, or until the winter melon is tender and translucent.

6. Finish and Garnish:

• Taste and adjust seasoning if necessary.

• Garnish with sliced green onions and cilantro leaves before serving.
