How to make Guizhou Spicy Chicken?

Ingredients:

• 500g chicken thighs or drumsticks, cut into bite-sized pieces

• 10-15 dried red chilies, cut into segments (adjust to taste)

• 1 tablespoon Sichuan peppercorns

• 4 cloves garlic, minced

• 1 thumb-sized piece of ginger, minced

• 2-3 green onions, cut into sections

• 1 tablespoon light soy sauce

• 1 tablespoon dark soy sauce

• 1 tablespoon Shaoxing wine

• 1 teaspoon sugar

• 1 teaspoon salt (adjust to taste)

• 2 teaspoons cornstarch

• 3 tablespoons cooking oil

• Sesame seeds and green onions for garnish

Instructions:

1. Marinate the Chicken:

• In a bowl, marinate the chicken pieces with light soy sauce, dark soy sauce, Shaoxing wine, salt, and cornstarch. Let it sit for at least 15-20 minutes.

2. Prepare the Spices:

• Heat the cooking oil in a wok over medium heat. Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant. Be careful not to burn them.

3. Cook the Chicken:

• Add the marinated chicken to the wok and stir-fry until the chicken is golden and crispy on the outside.

4. Add Aromatics:

• Add the minced garlic and ginger to the wok, stir-frying until aromatic. Toss in the green onions and continue to stir-fry.

5. Season the Dish:

• Add sugar and adjust salt if needed. Continue to stir-fry until the chicken is fully cooked and evenly coated with the sauce and spices.

6. Garnish and Serve:

• Garnish with sesame seeds and extra green onions. Serve hot with steamed rice.
