How to make Century Egg and Lean Pork Congee?

Ingredients:

• 1 cup rice

• 200g lean pork, thinly sliced

• 2-3 century eggs, diced

• 1 piece ginger, thinly sliced

• 4-5 cups water or chicken broth

• 1 tablespoon cooking oil

• Salt to taste

• White pepper to taste

• Chopped green onions and cilantro for garnish

• Sesame oil for drizzling

Instructions:

1. Prepare the Ingredients:

• Wash the rice thoroughly and soak it in water for about 30 minutes.

• Slice the lean pork thinly and marinate with a pinch of salt and white pepper.

• Dice the century eggs and slice the ginger thinly.

2. Cook the Congee:

• In a large pot, heat the cooking oil over medium heat. Add the ginger slices and sauté until fragrant.

• Add the soaked rice and stir-fry for a few minutes until the rice grains are coated with oil.

• Pour in the water or chicken broth and bring to a boil. Reduce the heat to a simmer and cook for about 45 minutes, stirring occasionally to prevent sticking. Add more water if the congee becomes too thick.

3. Add Pork and Century Eggs:

• Once the congee reaches the desired consistency, add the sliced pork and century eggs. Stir well and continue to cook for another 10 minutes or until the pork is cooked through.

4. Season and Serve:

• Season the congee with salt and white pepper to taste.

• Ladle the congee into bowls, garnish with chopped green onions and cilantro, and drizzle with a little sesame oil.
