How to make Tofu Pudding?
Ingredients:
• For the Tofu Pudding:
• 1 liter soy milk (unsweetened)
• 2 teaspoons gypsum powder (calcium sulfate)
• 1/2 cup water
• For the Ginger Syrup:
• 1 cup water
• 1/2 cup brown sugar
• 2 slices fresh ginger
Instructions:
1. Prepare the Coagulant Mixture:
• Dissolve the gypsum powder in 1/2 cup of water and set aside.
2. Heat the Soy Milk:
• In a large pot, bring the soy milk to a gentle boil over medium heat. Stir occasionally to prevent it from sticking to the bottom of the pot.
3. Add the Coagulant:
• Remove the soy milk from heat and let it cool for a minute.
• Pour the gypsum mixture into the soy milk, stirring gently to combine. Do not over-stir.
4. Let It Set:
• Cover the pot with a lid and let it sit undisturbed for about 15-20 minutes until the mixture solidifies into a soft pudding.
5. Prepare the Ginger Syrup:
• In a small saucepan, combine water, brown sugar, and ginger slices.
• Bring to a boil over medium heat, then reduce to a simmer for about 10 minutes.
• Remove from heat and let the syrup cool. Strain out the ginger slices before serving.
6. Serve:
• Scoop the tofu pudding into bowls.
• Drizzle with the ginger syrup and add any desired toppings like red beans, peanuts, or lotus seeds.
