How to make Hainanese Chicken Rice?
Ingredients:
For the Chicken:
• 1 whole chicken (about 1.5 kg or 3.3 lbs), preferably with skin on
• Salt
• A few slices of ginger
• 3-4 stalks of green onions
For the Rice:
• 2 cups jasmine rice
• 2-3 cloves garlic, minced
• 3 slices ginger
• Chicken fat or 2 tablespoons cooking oil
• 4 cups chicken broth (from boiling the chicken)
• Salt to taste
For the Chili Sauce:
• 5-6 red chilies
• 3 cloves garlic
• 1-inch piece ginger
• A squeeze of lime juice
• Salt and sugar to taste
For the Ginger Sauce:
• 100g ginger, peeled
• 3 cloves garlic
• 2-3 tablespoons chicken broth
• Salt to taste
Instructions:
Chicken:
1. Clean the chicken and rub it inside and out with salt. Fill the chicken’s cavity with ginger slices and green onions.
2. In a large pot, bring water to a boil. Add the chicken, ensuring it’s fully submerged. Boil for about 30-40 minutes, or until cooked.
3. Remove the chicken and immerse it in ice water for 5 minutes to stop the cooking process and tighten the skin. Then, remove and set aside to dry.
4. Reserve the chicken broth for the rice and sauces.
Rice:
1. Wash the jasmine rice until the water runs clear, then drain.
2. In a pot, heat chicken fat or oil over medium heat. Sauté garlic and ginger until aromatic.
3. Add rice and stir-fry for a couple of minutes.
4. Transfer the rice to a rice cooker. Add the chicken broth and salt. Cook according to the rice cooker’s instructions.
Chili Sauce:
1. Blend all the ingredients in a blender until smooth. Adjust the seasoning according to taste.
Ginger Sauce:
1. Blend the ginger and garlic, adding enough chicken broth to get a smooth paste. Season with salt.
To serve, slice the chicken and arrange it on a plate with the rice. Serve the chili sauce, ginger sauce, and a small bowl of extra chicken broth on the side. Garnish with cucumber slices if desired. Enjoy your Hainanese Chicken Rice!
