How to make Mango Pomelo Sago?
Ingredients:
• 2 ripe mangoes
• 1 pomelo
• 100g sago pearls
• 400ml coconut milk
• 2 tablespoons sugar (adjust to taste)
• Mint leaves (for garnish)
Instructions:
1. Prepare the Sago Pearls:
• Boil a pot of water and add the sago pearls. Cook according to package instructions until they are transparent. Stir occasionally to prevent sticking.
• Once cooked, rinse under cold water to stop the cooking process and set aside.
2. Prepare the Mango and Pomelo:
• Peel the mangoes and cut them into cubes. Set aside some cubes for garnishing the dessert.
• Peel the pomelo and separate it into segments. Try to remove as much of the white pith as possible to avoid bitterness.
3. Make the Coconut Milk Base:
• In a pot, combine the coconut milk and sugar. Heat over a low flame until the sugar is dissolved. Do not let it boil. Cool it down in the fridge.
4. Assemble the Dessert:
• In a serving bowl, mix the sago pearls and coconut milk mixture.
• Add the mango cubes and pomelo segments. Mix gently to avoid breaking the fruits.
5. Serve:
• Chill in the refrigerator for at least an hour before serving. Garnish with mint leaves and the reserved mango cubes.
