How to make Japanese Style Pan-Fried Dumplings
Ingredients:
• For the Dumpling Wrappers:
• 2 cups all-purpose flour
• 1/2 cup boiling water
• 1/4 cup cold water
• For the Filling:
• 1/2 lb ground pork or chicken
• 1 cup finely chopped cabbage
• 2 green onions, finely chopped
• 1 tsp grated ginger
• 1 garlic clove, minced
• 2 tbsp soy sauce
• 1 tbsp sesame oil
• Salt and pepper to taste
• For Cooking:
• Vegetable oil
• Water
• For the Dipping Sauce:
• 1/4 cup soy sauce
• 2 tbsp rice vinegar
• 1 tsp sesame oil
• Optional: chopped green onion, chili oil, or sesame seeds for garnish
Instructions:
1. Make the Dough:
• Mix the flour with boiling water, stirring until a rough dough forms. Add cold water and knead until smooth. Cover and let rest for at least 30 minutes.
2. Prepare the Filling:
• Combine the ground meat, cabbage, green onions, ginger, garlic, soy sauce, sesame oil, salt, and pepper in a bowl. Mix well.
3. Shape the Dumplings:
• Divide the dough into small pieces and roll each piece into a thin circle. Place a small amount of filling in the center of each wrapper. Fold the dough over the filling to create a half-moon shape, pleating the edges to seal.
4. Pan-Fry the Dumplings:
• Heat a few tablespoons of vegetable oil in a pan over medium heat. Place the dumplings in the pan, leaving space between each. Cook until the bottom of the dumplings are golden brown.
• Add a small amount of water to the pan (about 1/4 cup) and cover immediately. Let the dumplings steam until the water has evaporated and the dumplings are cooked through, about 5 minutes.
5. Prepare the Dipping Sauce:
• Combine soy sauce, rice vinegar, and sesame oil in a small bowl. Add optional garnishes as desired.
6. Serve:
• Serve the dumplings hot with the dipping sauce on the side.
