Now this is what I call a cozy winter lunch recipe😍
Recipe (serves 2)
• 2 cups broccoli florets
• 8-10 stalks of asparagus
• Juice of 1/2 lemon
• Big drizzle of extra virgin olive oil
• Pinch of salt
• 1/2 cup grain (I used farro)
• 1/2 cup store bought pesto
• 1/4 cup roasted almonds, roughly chopped
• 1/4 cup crumbled feta
• 1 avocado, cubed
• Salt + pepper to taste
Directions:
1. Preheat the oven to 375 F.
2. On a parchment lined baking tray, add broccoli with olive oil, lemon juice + pinch of salt. Bake for 30 minutes. 10 minutes before finished, add the asparagus to the tray with olive oil + salt.
3. Cook grain according to package instructions. Set aside.
4. Assemble the bowl by adding your grain, pesto, roasted almonds, feta, cubed avocado & broccoli. Mix together well.
5. Serve in salad bowls & top with roasted asparagus.
6. Finish with a drizzle of olive oil, and salt + pepper to taste. Enjoy!
