🍚Cauliflower Mexican red rice:
Either half portion rice half portion frozen cauliflower rice or full portion cauliflower rice.
Cook your rice then put it in a pan with the cauliflower rice, tomato paste and diced onion. Let it come together and serve with the following:
🍗Shredded Chicken:
Method 1: boil a chicken breast & shred with a fork then heat in salsa verde
Method 2: buy a rotisserie chicken & shred then heat in salsa verde
🍅Dice a whole tomato, 1/4-1/2 a red onion and some lettuce for some food volume.
🥑Sauce options include:
High protein Greek yogurt & Tajin sauce - make sure to get the sugar free plain yogurt
OR
Mash an avocado and mix with Tajin and limón.
