1/2 cup cooked vermicelli noodles
2 romaine lettuce leaves, chopped
1 Persian cucumbers, chopped
1/2 large carrot, chopped into matchsticks

Fresh Thai basil leaves, chopped
Fresh mint leaves, chopped
Fresh cilantro, chopped
Peanuts, chopped

β’ if using leftover vermicelli noodles, place in a serving bowl. Otherwise, cook vermicelli noodles according to package instructions. I boiled mine for 5 minutes. Drain and rinse in cold water. Add to serving bowl.
β’ to your vermicelli noodles, add all your chopped vegetables, peanut sauce, and garnish with peanuts and fresh herbs.
