What’s better than a sun-filled spring? A sun-filled spring with SPRING ROLLS 🤤 Let’s make some goooood eats, together!
𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
3-6 rice paper wrappers
4-5 Romaine lettuce leaves, chopped
Cooked vermicelli noodles, I used about 4oz uncooked
1/2 lb cooked shrimp, shells and tails removed
3 Persian cucumbers, chopped into quarters, lengthwise
1 large carrot, chopped into matchsticks
Fresh Thai basil
Fresh mint
Peanut sauce ingredients:
2 cloves garlic, pulverized
1/4” ginger knob, pulverized
4 Tbsp hoisin
2 Tbsp peanut butter
1 tsp chili garlic sauce
1/2 tsp sriracha
1/2 tsp soy sauce
1/2 tsp rice vinegar
1-2 Tbsp water
𝐦𝐞𝐭𝐡𝐨𝐝:
• Cook vermicelli noodles according to package instructions. I boiled mine for 5 minutes. Drain and rinse in cold water. Set aside.
• Make dipping sauce by adding all ingredients and mixing until well combined. Adjust water to attain desired consistency.
• Add warm water into a large and shallow plate. Dip rice paper wrappers in for 10 seconds on each side. Trust the process! The moisture will soften them as you continue working. **You don’t want them to soak for too long, as they’ll become too soft and floppy to work with**
• Place wrapper on a hard surface like a plate then load ‘er up with all the ingredients: shrimp, noodles, cucumbers, herbs, carrots, and lettuce.
• Roll the wrapper by folding the horizontal edge closest to you up over the ingredients, then tucking in each of the sides, and continue rolling.
• Serve with peanut sauce and enjoy!
