Let’s put a vegetarian twist on the classic “chicken piccata”, using tofu as the substitute!

Same classic butter caper piccata flavors, similar method of cooking, and just as tasty as the OG dish with chicken!

𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

• 1/2 block firm tofu

• 1 egg

• 1/4 cup + 2 Tbsp all-purpose flour (season with salt, black pepper, chili powder, and nutritional yeast)

• 1/4 cup plant-based milk

• 1 cup panko breadcrumbs

𝐛𝐮𝐭𝐭𝐞𝐫 𝐜𝐚𝐩𝐞𝐫 𝐬𝐚𝐮𝐜𝐞:

2 Tbsp butter

2 Tbsp evoo

1/2 lemon, juiced

2 Tbsp white wine

3 tsp capers

𝐦𝐞𝐭𝐡𝐨𝐝:

• press, drain, and dry tofu. Cut into 1/4” slabs.

• prep your dredging station. dredge tofu slabs in the following order: milk, flour, egg, breadcrumbs.

• heat olive oil in skillet over medium heat. pan fry tofu for 2-3 minutes on each side, or until golden and crispy.

• in the same pan you cooked your tofu, make the butter caper sauce by adding all the ingredients listed above and sautéing for 1-2 minutes.

• serve crispy tofu over a bed of mashed potatoes, drizzle with butter caper sauce, and enjoy!
