Let’s take your cooking skills to the NEXT LEVEL with these homemade Vietnamese-style baguettes; crispy, crunchy, and PERFECT for a Báhn Mì.
Once you bake these… you’ll never want to buy baguettes from the grocery store EVER again. Although these baguettes take a bit of time due to the kneading/proofing, they are worth EVERY ounce of time and energy.

𝐢𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
310 ml warm water (105º - 110ºF)
2-1/4 tsp instant yeast
1 tsp sugar
510 g bread flour
1 tsp salt
𝐞𝐪𝐮𝐢𝐩𝐦𝐞𝐧𝐭:
digital thermometer
kitchen scale
stand-mixer
𝐦𝐞𝐭𝐡𝐨𝐝:
• add water, yeast, and sugar and allow to sit for 10 minutes until water is bubble/frothy.
• add flour to yeast mixture and salt.
• knead for 10 minutes in stand mixer.
• roll and tuck into balls, cover with a damp tea towel, and allow to rest for 30 minutes.
• knead for 10 more minutes, then cover with a damp tea towel, and rest for another 1 hour in a warm and dark space. The dough will puff up to twice its size.
• punch down the dough, remove from the bowl, weight, and divide into 6 equally-weighted pieces.
• knead each piece into a ball, covering the dough balls with a damp tea towel.
• on a lightly floured surface, roll out each dough ball into a long flat piece, roll into a French bread shape, pinching the sides in and along the seams.
• place each french bread onto a bread pan, covering with plastic.
• add 2 cups of boiling water into a metal baking dish and place on the bottom rack of the oven, ensuring the oven is off.
• place baguettes on the middle rack and allow to proof for 45 minutes.
• remove the bread pan and water pan, then preheat oven to 475ºF.
• uncover baguettes and spray with water.
• moisten blade and slash down the length of the dough. Spritz with water.
• add 100mls of water to a metal baking pan and place on the bottom of the oven and place the bread pan onto the middle rack.
• sprtize with water once more then bake for 18-20 minutes, or until the loaves are golden brown.
𝐧𝐨𝐭𝐞𝐬:
• if you don’t have a stand mixer, you can knead the dough traditionally by hand. This will take 2-3x the amount of time it would in the stand mixer.
• the baking dish of hot water is necessary. It helps create a humid oven, which produces a crispy, golden crust.
• if you don’t have bread flour on-hand, don’t fret! You can substitute with all-purpose flour.
