Homemade Bone Broth Recipe

Ingredients:

- 1 chicken carcass (bones from a whole chicken)

- 4-5 chicken feet (optional, for extra collagen)

- 1 onion, quartered (no need to peel)

- 2-3 celery stalks, roughly chopped

- 2-3 carrots, roughly chopped

- 4-5 garlic cloves (smashed, with peel on)

- Fresh herbs (like parsley, thyme, rosemary, or whatever you have on hand)

- 1-2 bay leaves

- 10-15 peppercorns

- Any veggie scraps you have collected throughout the week (like leek tops, carrot peels, or zucchini ends)

- Water (enough to cover everything)

- 1-2 tbsp apple cider vinegar (optional, helps draw out minerals from the bones)

Instructions:

1. Prep your ingredients: In a large stockpot, add the chicken carcass, chicken feet (if using), onion, celery, carrots, garlic, fresh herbs, veggie scraps, bay leaves, and peppercorns.

2. Add water: Pour enough water over the ingredients to cover them completely, making sure the bones are submerged.

3. Add vinegar (optional): If using apple cider vinegar, add 1-2 tablespoons to the pot. Let it sit for about 20-30 minutes before turning on the heat. This helps draw out the nutrients from the bones.

4. Simmer: Bring the mixture to a boil, then reduce the heat to low and let it gently simmer for 8-10 hours, or even longer (up to 24 hours for maximum flavor and nutrition). Skim any foam that rises to the surface during the first hour of simmering.

5. Strain the broth: Once the broth is done, remove from heat and strain through a fine mesh strainer or cheesecloth to remove the solids.

6. Cool and store: Allow the broth to cool, then store in the fridge for up to 5 days, or freeze in portions for up to 6 months.

Use in recipes: Replace chicken stock in soups, stews, or grains for a nutrient boost.
