This soup is the best combination of creamy and spicy, you can also make a mild version if you don’t like spice!
Ingredients:
1 medium yellow onion, chopped
3-4 ribs of celery, chopped
3 cloves of garlic, minced
1 pound ground spicy sausage (or mild if you don’t like spicy)
3 tbsp flour
1 cup heavy cream
5 cups chicken broth
2-3 cups spinach
2 cups fresh tortellini (I get this in the refrigerated section of the market but if you get frozen just note it will take a little longer to cook)
Seasonings: (I measure with my heart/taste for the following) garlic powder, onion powder, Italian seasoning, red pepper flakes, parsley flakes, salt, pepper
Directions:
1. Heat a soup pot with olive oil then add the ground sausage, onions, and celery and cook down for about 8 mins
2. Add in the garlic and cook for another 2 mins
3. Add the flour and cook down for another 2 mins
4. Add in all seasonings and mix
5. Add the chicken broth 1 cup at a time while stirring, then add the heavy cream slowly while continuously stirring. Bring to a low boil then reduce to a simmer
6. Then add the spinach and tortellini and cook for about 4-5 minutes while occasionally stirring (note: if using frozen tortellini go according to the package for the cook time and add spinach a little after adding the tortellini to give tortellini more time for cooking)
Serve with some warm toasted bread and enjoy! 😊
