This is one of my FAVORITE summer treats, and it’s SO easy to whip up.

Dill Pickle Pasta Salad 🥒🍝
Ingredients:
- 3 cups rotini pasta 🍝
- 1 cup cheddar cheese, cubed 🧀
- 1 cup dill pickles, diced 🥒
- 1/4 cup dill pickle juice 🥤
- 3/4 cup mayonnaise 🍶
- 1/3 cup sour cream 🥄
- 2 tbsp fresh dill, chopped 🌿
- 1/2 tsp salt 🧂
- 1/2 tsp black pepper 🌑
Instructions:
1. **Cook the Pasta**: Boil a pot of water and cook 3 cups of rotini pasta until al dente according to package instructions. Drain and run under cold water to cool. 🍝💦
2. **Prepare the Dressing**: In a large bowl, whisk together 3/4 cup of mayonnaise, 1/3 cup sour cream, 1/4 cup dill pickle juice, 1/2 tsp salt, and 1/2 tsp black pepper. Mix well until combined. 🍶🥄
3. **Chop the Ingredients**: Dice 1 cup of dill pickles and cube 1 cup of cheddar cheese. 🌿🧀
4. **Combine Everything**: Add the cooled pasta to the bowl with the dressing. Add in the diced dill pickles, cubed cheddar cheese, and 2 tbsp of chopped fresh dill. Gently toss everything together until well coated. 🍝🥒🧀
5. **Chill and Serve**: Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving. This will help the flavors meld together. Once chilled, give it a quick stir and enjoy your Dill Pickle Pasta Salad! ❄️🥗
