🥧 Homemade Mini Pecan Pies!!

Serves 12 (double the ingredients for 24).
Ingredients:
Pie crust (for 1 pie crust, double ingredients for more)
•1 1/4 cup all purpose flour
•1/4 cup ice water
•1/2 cup cold butter (1 stick)
• 1/4 tsp salt
•1/2 tsp granulated sugar (white)
*Toss everything into the KitchenAid w/dough attachment set to speed 4-5 till dough forms. Flour surface & roll out. Cut out 3 1/2 inch circles (I used a stemless wine glass). Grab a standard muffin pan and generous coat with nonstick spray. Press the pie crust into the pan, make sure to press down to make it snug.
Pie filling: (double ingredients for 24)
Whisk together…
•2 tbsps white granulated sugar
•4 tbsp light brown sugar
•1 tbsp unsalted melted butter
•1 tsp vanilla extract
•1/3 cup light corn syrup
•1 large beaten egg
•pinch of salt
•1/2 cup finely chopped pecans
*Fill each crust with 1 tbsp of filling. Bake 22-25 mins (the middle shouldn’t jiggle). Cool on wire rack
