So since it’s been cold here we made caldo de pollo! Translates to chicken soup. This is how I make mine!! I hope you like it. Read very bottom for chile oil recipe.
Caldo de pollo
4-5 whole Carrots chopped
3-4 Potatoes chopped (if you have them)
5 corn cut in halves
2-3 Squash
1/2 an onion
2 bay leaves
2 Chayotes chopped
1/4 cabbage chopped
Cumin powder
Garlic powder
chicken bouillon to taste
boil chicken legs then skim the top to rid the excess fat and clear the broth
Season chicken with two bay leaves 1/2 onion chicken bouillon and cumin. Throw veggies in until completely cooked through and serve with your favorite sides!! Limon, and chile de Aceite or Chile oil.
Chile de Aceite or Chile oil recipe
Chile de Arbol dried
2 cups of oil heated in sauce pan
10-15 chiles
1-2 garlic cloves finely chopped
fry for only 1-2 minutes in pan because they burn fast and will taste almost bitter. So only let them soak enough then blend with little oil in blender. Then put hot oil on the side in glass cup or plate and throw the blended garlic and chiles with salt to taste and stir.
