Apple fritter season is upon us!!! 🍎🍏
If you’re like me and you miss your childhood fried favorite, give my baked fritters a try! So delicious, wholesome, and fall approved.

RECIPE YIELD: 7-8 FRITTERS
PREP TIME: 15 minutes FRY & BAKE TIME: 25 minutes
1 apple peeled and diced (about 1 cup)*
1/3C coconut milk, full fat
1 tsp lemon juice
2 large eggs
1/3-3/4C coconut sugar (to taste)
1.5C almond flour (may substitute with 1 1/4C oat flour)
1/2C tapioca flour
1/3 C coconut flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp baking powder
3 tbsp refined coconut oil or melted butter
1 tsp vanilla
Glaze or Frosting:
1/4 C maple syrup
⅓ C full fat coconut milk
3 tbsp coconut butter
Recipe Notes
*Cut them as small as possible and they will be much easier to handle!
This glaze pictured here is with coconut butter, making the consistency thicker and color whiter.
DIRECTIONS:
1) preheat oven to 350 degrees Fahrenheit
2) Peel, core and small dice apples and then put in a bowl with lemon juice to prevent browning. Add coconut milk, coconut sugar, vanilla and eggs to mixture.
2) Whisk flours, spices and baking powder in a large bowl. Then make a well in the center and add all wet ingredients ( the apple mixture.) Then, stir in the refined melted coconut oil.

4) Scoop 9 serving spoons or 1/3 measuring cup full of batter on a baking sheet. Bake for 15-20 min.
7) make the glaze: melt coconut butter for 5 seconds in the jar to soften. In a small bowl, combine softened coconut butter with other ingreds — then microwave another 5-10 seconds until flood consistency.
8) Let cool for at least 5 minutes, then pour glaze over slightly warm fritters. Let glaze set before eating.
