Tips for the best grain free loaf 🍞:    

   - Let your bread cool in the oven. It will prevent the top from sinking.

RECIPE           

Prep Time: 10 minutes Bake Time: 40-45 minutes    

Dry ingredients

Β½ C coconut flour    

1/2 C tapioca flourΒ     (plus 2 tbsp for apple mixture)

Β½ C almond flour    

1 tsp baking powder    

Β½ tsp baking soda   

Wet ingredients

1/4-1/2 tsp nutmeg (to taste)    

3 large eggs   

2/3 C coconut, oat or almond milk mixed w 1 tsp lemon juice    

ΒΌ C melted refined coconut oil (may substitute with avocado oil or butter)    

Apple filling

1.5 C apples (2) diced into 1/4 inch pieces   

2 tsp lemon juice    

2/3-3/4 C coconut or maple sugar* (to taste)   

1 tbsp tapioca starch

Cinnamon Sugar Mixture for apples   

1/4C coconut, monk fruit, or maple sugar    

1 tsp cinnamon   

Coconut Butter Glaze    

3 tbsp coconut butter   

1/3C coconut milk, full fat   

1/4 C maple syrup    

   

DIRECTIONS    

 1) Preheat oven to 350 degrees. Line a large loaf pan with parchment paper.    

2) in a small bowl, stir diced apples and lemon juice. Pour cinnamon & sugar & extra tapioca starch on top and stir.    

3)Combine all dry ingredients, including sugar. Form a well in center then add milk and eggs. Stir to form batter. Then, add coconut oil.    

Pour half of the batter in your pan and top with half apples.

7) Pour rest of the batter on top. Top with the rest   

 and cinnamon sugar.   

  8) Bake for 38- 40 minutes or until toothpick comes out clean.   

  9) Prepare coconut butter frosting by melting coconut butter, maple syrupcoocnut milk and whisking to combine.   

  9) Pour glaze over warm bread. Slice.
