CAPRESE PESTO SANDWICH 🍅🧀🥪

One of my favorite quick+easy lunches!

Take two slices of your favorite bread, I use sourdough, and spread about a tablespoon of pesto sauce on one side and a tablespoon of butter or mayo on the other side. Add a slice of fresh mozzarella, tomato, and a couple basil leaves. Grill this baby up on a heated pan for about 2 minutes on each side, making sure to cover with a lid so that the cheese gets nice and melted🧀🤩

(key tip- if you want a crispier sandy, which who doesn’t, lightly butter the outsides of your bread too before sticking on the heated pan!)
