fresh homemade pesto and caprese sandwich

I made fresh pesto and caprese sandwich for lunch today. It was simple, but oh-so-good!

Here’s my homemade pesto recipe:

Ingredients:

• 1 cup fresh basil leaves (make sure to remove all the stems to avoid any bitter taste)

• 1/4 cup grated Parmesan cheese (add more if desired)

• 1/2 cup walnuts

• Pinch of salt and pepper

• 4 tablespoons of extra virgin olive oil

• 2 - 3 gloves garlic

if you want to make more and save some for later (trust me, you can never have too much!), just double the recipe. You can also substitute half/half spinach and basil.

After making the pesto, assemble the sandwich with fresh tomatoes, basil, a sprinkle of salt and pepper, and some mozzarella cheese.

Such a fantastic lunch at home 🥹
