i'm always looking for ways to make low-carb meals fun and delicious and this one was definitely a hit! as a big fan of anything buffalo, this doesn't lack any flavor or indulgence even though the filling is slathered into a healthful zucchini half.
it's also a simple 30 minute meal. we love a seamless weeknight recipe!
what you need:
- zucchini, halved with the seeds scooped out
- 1/4 cup your fav buffalo sauce (I use primal kitchen)
- chik'n (I use tofurky lightly seasoned)
- 1/2 cup vegan cheddar (I use violife)
- salt, pepper, garlic powder
how to prep:
- preheat oven to 375° f
- place zucchini halves on a lined sheet pan
- in a large bowl, mix together buffalo sauce, chik'n, cheddar, and seasonings
- fill your zucchini halves with the chik'n mixture (you can overfill!)
- bake for 25 minutes
feel free to top with fresh herbs, a drizzle of ranch, and enjoy!
