I’ve been eating gluten free exclusively for about 5 years now. What started with having to limit it turned into having to eliminate it completely!!
I have to say - I definitely don’t ever feel like I am missing out. I mean, I have my moments, but there are so many great gluten free options these days, even compared to when I first started eating GF.
The key to it all is finding foods that satisfy you and I am here to share ALLL the gluten free goodies with you!!
Here’s my most recent chocolate chip cookies:
1/2 Cup Butter
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 1/2 Cup Gluten Free Flour (I use King Arthur)
1/2 TSP Salt
1/2 TSP Baking Soda
1/2 TSP Baking Powder
Splash of vanilla
1 egg
Chocolate Chips
Preheat oven to 375
Mix flour, salt, baking soda, and baking powder in a bowl and set aside.
Mix butter, sugar, brown sugar together. Then, add in the egg and vanilla.
Add the flour mixture slowly to the wet mixture while mixing until you create the dough. Add chocolate chips and mix. I used about half a bag.
Spoon your mixture into 2” balls and bake for 9-10 min at 375.
