Healthy-ish snack: zucchini pizza bites

When you want pizza but want to keep it healthy-ish or gluten free or just want to eat more veggies, try these :)

1 zucchini

2-3 tablespoons tomato or pizza sauce (I love Rao’s)

1 cup grated mozzarella

handful of mini pepperonis

chopped parsley for garnish

slice zucchini into 1/2-inch rounds. top with sauce, mozzarella, and pepperoni. bake at 400 F for ~10 minutes, or until cheese is melted and bubbly. garnish with chopped parsley! Trust me you won’t be able to stop at just a few :)
