Pumpkin pie spice waffles

Batter ingredients:

3/4 cups vanilla caramel creamer (you can substitute for regular vanilla creamer, milk, almond milk or just water.)

1/4 cup firmly packed light brown sugar

1/2 cup pumpkin pureee

1 tsp pumpkin spice

1 tsp vanilla (if using water/almond milk instead of vanilla creamer use 2tsp of vanilla instead)

1 large egg

2 tablespoons oil

2 cups buttermilk pancake/waffle mix (I’ve been using the great value brand)

Cream cheese icing:

1 8oz block of cream cheese

1 can of sweetened condensed milk

1 tsp of vanilla extract

3 tablespoon whole milk (can substitute for water, almond milk, or oat milk)

Cinnamon caramel sauce:

1/2 cup heavy cream

1/4 cup melted butter

1 tsp cinnamon

1/2 tsp vanilla

1/4 cup brown sugar

Batter instructions:

Mix the dry ingredients and the wet ingredients in separate bowls

Dry ingredients:

1. waffle/pancake mix

2. Pumpkin spice

3. Brown sugar

Wet ingredients:

1. Pumpkin purée

2. Egg

3. Vanilla extract

4. Creamer

5. Oil

After mixing the wet and dry ingredients separately, slowly pour and mix the wet ingredients into the dry ingredients.

Tip: DON’T pour the wet ingredients all at once. After each pour mix the batter to avoid/minimize lumps.

Cream cheese icing instructions:

I blended all of the ingredients together to make it faster.

If you are hand mixing then you’ll want to make sure that your cream cheese is soft enough to mix everything together.

Cinnamon caramel sauce instructions:

You’ll need to cook this on the stove.

You’ll want to make sure that you don’t leave this unattended or else it may burn.

1. Turn stove on to about medium/medium-low

2. Stir the brown sugar, butter, vanilla extract, and cinnamon in a pot or pan.

3. You’ll want to be stirring/whisking as all the ingredients melt together.

4. When everything is melted and mixed, you’ll stir in the heavy whipping cream.

5. Continuously stir everything until it becomes a smooth thick consistency.

Cooking the waffles:

You’ll butter up your waffle maker then add the batter into the waffle maker.

Once the waffles are done cooking, you can drizzle the cream cheese icing and cinnamon caramel over them. Add some berries on the top if you’d like!
