This 6-pack Light Brioche buns are inspired by the boys in the house who are currently binge-watching Chris Heria videos and surreptitiously training to achieve abs like the legend himself 🔥
These light brioche buns are made with half the calories (ok not really, I don’t know for sure but I used less sugar, less butter and less eggs than regular brioche) but twice the fluffiness!
These cloud-like soft enriched buns are great for loaves and burgers too!
Eat your light brioche buns and go to the gym!

325g Bread Flour
140g Milk
45g Sugar
2 Egg Yolks
50g Butter
4g Salt
5g Instant Yeast
Filling
Potatoes 200g (boiled until soft)
100g grated cheese
200g Shredded Cheese
2g Salt
5g black pepper
30g Milk
30g Mayonnaise

➡️ Mix everything except butter in a stand mixer until the dough is strong and fairly elastic.
➡️ Add butter in small cubes to the dough gradually and knead until window-pane stage.
➡️ Proof the dough until double.
➡️ Divide the dough into equal portions of your desired size and roll into smooth balls.
Cover and rest for 15min.
➡️ Degas and wrap fillings in each dough, roll into smooth balls, sealing the seams tightly.
➡️ Proof the dough until double.
➡️ Brush with egg wash (optional)
➡️ Preheat and bake at 180C for ~ 20mins.
