Ingredients

For the Spiced Sugar

1/4 cup (50 g) granulated white sugar

1/2 teaspoon pumpkin pie spice

For the Chewy Pumpkin Cookies

1/2 cup (122 g) canned pumpkin puree (Libby's recommended)*

1 3/4 cups (219 g) all-purpose flour, spooned and leveled

1 tablespoon pumpkin pie spice

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup (168 g) unsalted butter, softened

1 cup (220 g) light brown sugar, packed

2 egg yolks, at room temperature

2 teaspoons vanilla extract

For the Coffee Cream Cheese Frosting

1 cup (240 ml) heavy cream

8 oz (226 g) cream cheese, softened

1 tablespoon instant espresso powder

1 teaspoon vanilla extract

1 cup (135 g) powdered sugar

1/4 teaspoon pumpkin pie spice

Instructions:

1. Spiced Sugar: Mix granulated sugar and pumpkin pie spice in a small bowl; set aside.

2. Pumpkin Prep: Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Spread canned pumpkin puree on a plate and blot with paper towels until reduced to ~1/4 cup (~42 g); set aside.

3. Dry Ingredients: In a medium bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt; set aside.

4. Cream Butter & Sugar: Beat softened butter and brown sugar in a large bowl with an electric mixer until light and fluffy (1-2 minutes).

5. Wet Ingredients: Add egg yolks and vanilla; mix well. Incorporate dried pumpkin puree on low speed.

6. Combine: Gradually add dry ingredients to the wet mixture; stir until just combined. If sticky, refrigerate for 10 minutes.

7. Form Cookies: Use a 2-tablespoon scoop to portion dough, roll into balls, coat in spiced sugar, and place 2 inches apart on baking sheets.

8. Bake: Bake for 12-14 minutes (12 for chewy, 14 for crispier). Let cool for 5 minutes on the sheet before transferring to a cooling rack.

9. Coffee Cream Cheese Frosting: Whip heavy cream until stiff peaks form; set aside. Dissolve instant espresso powder in vanilla extract.

10. Frosting: Beat cream cheese, powdered sugar, pumpkin pie spice, and espresso-vanilla until smooth. Gently fold in whipped cream and chill.

11. Assemble: Pipe frosting onto cooled cookies, starting in the center. Optionally, sprinkle with cinnamon. Enjoy!
