What mom doesn’t love giving their kids a treat with a little hidden veggies?? Okay I don’t like to necessarily hide veggies from my daughter because I want her to learn to love them, however these muffins are the perfect combo of sweet from corn with some added carrots and broccoli!
I got the recipe from Feeding Tiny Bellies. They can also be made dairy free with a few substitutes, which I did for my daughter.
Ingredients:
• ⅓ cup grated carrots
• ¼ cup finely chopped broccoli floret heads
• ¼ cup corn kernels
• 1 egg
• ½ cup milk of choice
• ¼ cup avocado oil
• ½ cup shredded cheddar cheese or 1 TBSP nutritional yeast
• 1 cup all purpose flour
• 2 tsp baking powder
• ½ tsp salt (omit if baby is less than 1 year old)
• ⅛ tsp black pepper
Mix together wet ingredients; egg, milk, oil, cheese then add in all veggies. In a separate bowl mix dry ingredients; flour, baking powder, salt, pepper. Combine everything together and mix until incorporated. Scoop out portions in a greased muffin tin. Bake at 350 degrees for 15-20 minutes.
