Parmesan Cream Pasta

Ingredients:

3/4 lb - 350g spaghetti

3 oz - 100g parmesan, grated

2 oz - 60g butter

7 oz - 200ml heavy cream

1 small onion, finely chopped

2 garlic cloves, minced Salt and pepper to taste

Instructions:

Cook the pasta in salted boiling water until al

dente. Keep some pasta cooking water. Drain and set aside.

Melt the butter. Add the chopped garlic and onion. Cook on medium heat for about 3 minutes or until the onion is soft and

translucent.

Add the cream. Salt and pepper to taste. Cook for 2 mins.

Add the parmesan and stir until well incorporated (turn off the heat so that the cheese does not clump). Then stir in the cooked pasta. It's ready! Top with more parmesan and fresh parsley if desired.

It's very important to turn off the heat before adding the Parmesan. Otherwise, you risk getting lumps.

ou can add a bit of pasta cooking water to help incorporate the parmesan to the sauce.
