as a student who’s looking to eat healthy and economically, it can be quite difficult to find time to prep for meals… yet again, I dread queuing up for food in school especially during the peak lunch periods 😭 if you’re like me, save this post because I discovered a quick meal prep idea that’s low calorie + high in protein too!

Ingredients & Preparation:

🥒Japanese cucumber - slice it up & add soya sauce/salt

🍗Chicken Breast (no prep needed! was busy so I just grabbed 7-11’s herb chicken breast that’s only 98 kcals & 20g protein!)

🍳🥕2 Eggs + 1 Carrot - I cut the carrots into thin strips & whisked the eggs; fried the carrots first as they take longer to cook before pouring the eggs into the frying pan, season with some salt and scrambled them up! (I never knew carrots & eggs go so well together until I’ve tried it, the carrots are sweet & somehow it’s always very fragrant when scrambled w eggs!)

Estimated around 250-300 kcals and 32g protein !!!

Assembled everything in my lunch container & done! super simple, fuss-free and filling for a quick lunch in between classes ☺️
