I love traditional chicken salad, but I wanted to make my own version of it and increase the protein content so here it is!

If you love a quick lunch that you can just have ready or want something to snack on this recipe is perfect for you!

Once you have everything prepped and chopped it’s the easiest thing to throw together because all you have to do is mix up the ingredients, toast a piece of sourdough or have some simple mills crackers handy and you’re set!

Recipe:

1 can of chicken (can use shredded chicken breast or rotisserie chicken as well)

1 apple

Hand full of grapes

1/4 cup Red onion

1/4 cup Bell pepper

1 cup Plain Greek yogurt

Sour dough or simple mills crackers

Chop up all the ingredients, add your Greek yogurt and mix together! You can eat it by itself, with sourdough (my fav) or simple mills crackers. If you want to add in some more healthy fats, spread some avocado on your sourdough and the add your chicken salad!
