This lunch idea may seem intuitive and incredibly easy, but Iβve made it the last few days for lunch and cannot get enough. Whether you need an extra little snack in the day to sneak some protein in or want a lighter lunch I promise you will love this!
What youβll need:
- rice cakes - I love the thin ones, theyβre sturdy, but much easier to bite into than the regular thick ones
- jam - and kind will work, Iβm loving a raspberry habanero one I found at the local farmers market
- slice of cheese - sharp white cheddar is my favorite for this
- crunchy lettuce
- turkey breast - the peppered turkey from Whole Foods is π€π»
Spread the jam on each rice cake, break up a slice of cheese and split it up evenly, toss on some lettuce, and top with a slice of turkey. The most delicious lunch in 2 minutes!
