If you’re looking for healthy, high protein dinner inspo, I gotchu! These three salads are packed with fiber, protein, and healthy fats.
🍤Shrimp Cobb Salad
- Salad Base: Romaine Lettuce, Soft Boiled Eggs, Blue Cheese, Cucumber, Avocado, Cherry Tomatoes, Green Onion, Bacon
- Season fresh or frozen shrimp (de-shelled and de-veined) with salt, pepper, paprika, and garlic powder
- Cook shrimp over medium-high heat for about 2-3 minutes per side)
- Assemble dressing of choice (I used a dijon vinaigrette made with olive oil, apple cider vinegar, dijon mustard, salt, pepper)
- Assemble salad and enjoy!
🍣Salmon Salad
- Salad Base: Romaine, Red onion, Cucumber, Tomato, Red Cabbage, Radish, Avocado
- To make the salmon: combine juice of 1/2 lemon, 2 minced garlic cloves, 2 tbsp olive oil, and a tbsp of dill. salt the salmon and cover with seasoning mixture. bake at 375 for 20ish minutes🌟😙
- Assemble salad and top with Trader Joe’s Cucumber Dill Dressing (or tzatziki would be good here too!)
🥩Steak and Blue Cheese Salad
- Salad Base: Romaine, Tomato, Cucumber, Red Onion, Avocado, Blue Cheese
- I use the pre-cooked sirloin steak from Costco or Trader Joe’s, but you can cook the steak to your liking
- Assemble salad and drizzle with blue cheese dressing
